Lentil-Turnip-Fennel Soup

Ingredients
1 cup each raw yams, parsley, fennel, and turnips2 cups kale1/2 cup parsley3 tablespoons Enova oil1/2 cup lentils, any color1 small onion2 cups vegetable broth
Directions
Place all ingredients in a 1-quart crock pot. Cook on medium for at least 9 hours. When done, process until pureed with hand-blender, then allow to continue cooking on medium until ready to serve.

Serve in bowl ideally with a dollop of sour cream or kefir.
