Pasta with Sausage and Kale

3 T Olive Oil1/4 cup water1 lb Owens Hot Sausage1 cup chopped onion2 garlic cloves, minced1 tsp red pepper flakes28 oz can peeled (or crushed) tomatos1 quart (4 cups) water16 oz pasta (this was a mix of primarily orecchiette and fusilli)3 cups kale (or broccoli rabe)
1. In a large pot (dutch oven) over medium high heat, put oil, water and sausage. Cover and cook until water evaporates.
2. Fry the sausage until brown on all sides. remove sausage and drain
3. Add onion, garlic and red paper flakes to pot. Cook for 2 minutes until soft.
4. Return sausage to pot. Add tomatoes and water. Bring to a boil.
5. Add pasta and cook for 10 minutes
6. add kale and cook for another 5 minutes
Serve hot.
