Banana Health-Craze Muffins

Ingredients
2 cups mashed overripe bananas1 cup nonfat milk3 large eggs1/2 cup canola or olive oil1 cup Splenda and 1/4 cup sugaror1 and 1/4 cup Splenda3 tbsp cinnamon5 tsp baking powder1 tsp salt1 cup soy flour1/8 cup oat bran1/8 cup wheat bran1 cup old-fashioned oats2-1/2 cups flour (white or wheat)2 cups COOKED 7-grain hot cereal 2 cups raisins1 cup sliced almonds
Directions
Beat together bananas, milk, eggs, oil, Splenda, sugar, cinnamon, and salt.
Add remaining ingredients and mix until moistened.
Bake in muffin tins at 400 degrees for 20-25 minutes.
Makes 4 dozen. One serving equals 1 muffin.
Tips:
-Once cool, lock muffins in air-tight containers like zipper freezer bags to retain moisture.
-Try adding 1 cup chopped apples to add sweetness.

    I substitute the oil in all my baking recipes for an equal amount of applesauce. It doesn't matter what kind of applesauce you use. I have tried several...plain, cinnamon, chunky, unsweetened. No one will ever know and the end results are always moister than if made with oil! Use honey, not Splenda! - 7/22/08

    Recipe looks good. Not sure why people are saying would be healthier without this or that. Considering most muffins you'd buy are 250 calories plus, these are great. Soy is good for you. I'd agree replacing applesauce for oil. Nothing wrong with the rest though. - 7/22/08

    And how tiny are these muffins? They sound delicious, but I'm afraid if I make them in normal sized muffin tins they are just too many calories to be worth it. A one bite muffin to me is a tease- Like 1 Dorito or salted peanut. - 7/22/08
