Braised Baby Back Ribs

2 - Pork Baby Back Ribs, boneless3/4 C. Onion, diced1/2 C. Celery, dicedGarlic, 2 cloves, minced1 T. Tomato Paste1/2 C. Beer1/4 C. Cider Vinegar1/4 C. Brown Sugar, unpacked2 tsp. Worchestershire Sauce2 C. Chicken StockEVOOSpice Mix (I used garlic powder, onion powder, ground mustard, black pepper, salt, paprika, cumin, and coriander)
Preheat oven to 350. Pat meat dry, rub with spices of your liking. Heat a large dutch oven over High heat with EVOO. When pan is screaming hot, add meat. Quickly brown both sides and remove from pan. Turn heat down to medium. Add onion, celery, and garlic. Saute until soft. Add tomato paste, cook for 1 minute. Add beer and vinegar, scrape up brown bits from bottom of pan, and reduce by half. Add worchestershire sauce. Place meat back in pan, add enough chicken stock to just cover meat. Cover hte pan and place in the oven for 1 hour or until meat is cooked through (160 degrees). Slice meat and sppon sauce over top. Serve with potatoes prepared to your liking.
