Spinach and egg breakfast taco

Ingredients
1 tbsp coconut oil1 clove garlic, minced3 tbsp onion, chopped1/4 cup fresh baby spinach leaves1/4 fresh jalapeno pepper, chopped2 or 3 slivers of a sweet red pepper, chopped1 large egg1 large flour tortilla1 tbsp shredded Mexican 4 cheese blend1 tbsp picante sauce
Directions
Start with coconut oil, saute in spinach leaves, garlic, onion, jalapeno and red peppers until tender. Add egg and scramble in. Serve on a tortilla with a dab of picante and shredded cheese. You can add a bit of salt and pepper to taste, but I find it usually doesn't need salt with the picante sauce and cheese.
