Pancakes with Blueberries, Atkins, Low Carb

1/3 cup Atkins All Purpose Baking Mix5 drops of liquid stevia1/4 cup Erythritol 1 tsp. Baking Powder1 dash Salt1 dash cinnamon2 tbsp Heavy Whipping Cream2 tbsp water1 large fresh Egg25 Blueberries, fresh or frozen
Blend all dry ingredients together in a large mixing bowl. Add the cream and the egg. Whisk batter, then let the mixture stand for at least five minutes to activate the baking powder. Preheat the griddle to medium heat and grease with butter or coconut oil. Pour batter onto hot griddle & dot with blueberries. Flip the pancakes when bubbles appear on the top & edges start to cook. Serve or freeze.
