Pork Loin Stir Fry

Ingredients
1 pound of pork loin sliced into bite sized pieces (salt and pepper to taste)1.5 cups broccoli floretts1/2 red pepper cut into strips1 can of bamboo shoots1 can sliced water chestnuts1 medium onion sliced8 oz mushrooms washed and sliced2 tbsp low sodium soysauce2 tbsp stir fry sauce1 tbsp peanut oil
Directions
*Add half of the peanut oil to a wok or large frying pan and heat to medium high.

*Once hot add all the onions and mushrooms and cook until the onions soft, about 3 minutes. Add the mushrooms and half of the tamari sauce and continue to cook for about 1 minute.

*Remove onions and mushrooms and set aside. Add remaining peanut oil and then add pork loin. Cook for about 5 minutes stiring to make sure all sides are seared.

*Place onions and mushrooms back in the pan and add all remaining ingredients. Stir fry for an additional 5 minutes.

*Makes 4 servings each containing 4 oz of lean protein and 2 servings of vegetables.

*Serve with rice or noodles of your choice. Brown rice is a great choice that will add 108 calories, 22 carbs, 1 gram of fat and 3 grams of protein per 1/2 cup serving.
