Cucumber-Tomato Salad in Garlic-Yogurt Dressing

Ingredients
2 large cucumbers, peeled, deseeded and chopped 2 Roma tomatoes, deseeded and chopped 4 green onions, julienned fine1/2 cup fresh mint, chopped fine 1/2 cup fresh parsley, chopped fine 3 tablespoons lemon juice 2 cloves garlic, crushed and minced1 cup plain low-fat yogurt (can use Greek yogurt if you prefer it)black pepper
Directions
Mix mint, parsley, lemon juice, garlic, onions, black pepper and yogurt in a large bowl to thoroughly combine. Add cucumbers and tomatoes. Stir. Let chill at least 15 minutes before serving.
