Mexi Chix Skillet with Black Beans, Brown Rice and Rotel

2 cups Instant Brown Rice1.75 cups chicken/beef/vege stock1 can Black Beans - drained and rinsed1 can Rotel - do NOT drain3 - 4 small chicken breasts, cooked, diced(or saute chicken in pan and remove before cooking rice)
Bring stock and Rotel to a boil in a skillet, add rice and beans.
Cook rice mixture according to package directions. Don't forget the lid! If using regular brown rice, cook longer - according to package.
When rice is done and "fluffing" for 5 minutes, add chicken to heat through.
Serving Size: approximately 6 - 1.25 cup servings
