Corned Beef and Barley Soup

Ingredients
3 lbs corned beef brisket4 tbsp olive oil8 cups beef broth1 tsp ground oregano1 tsp ground basil1/2 tsp ground thyme1/2 cup fresh parsley, chopped2 medium onions, chopped2 stalks celery, chopped8 ounces cooked pearl barley1 can tomatoes, choppedSalt and pepper to taste
Directions
Sauté beef in oil for 5 minutes until well-browned. Add remaining ingredients and simmer for 1 hour.
Serves 12.

    I doubled this recipe for a church supper on St. Patrick's Day. It was a huge hit. One 3# brisket was plenty of meat. I cooked the meat ahead of time in a crockpot so I could cool it and remove the fat. The combination of spices was awesome! I also added cut carrots and shredded cabbage. - 3/17/10
