Stir Fry Teriaki chicken with rice

Ingredients
Stir Fry Teriaki Chicken with Rice: With a big family and a lot of extra friends frequently joining us for dinner, this is a weekly staple. Make rice (5 cups uncooked brown rice + 6.5 cups of water) in rice cooker. Defrost 3-4 frozen costco brand chicken breast halfs and dice into .25 in. cubes -- saute in olive oil with garlic, add a Tof brown sugar and a T of low sodium soy sauce, ginger and cayenne to taste --reduce and carmelize a bit-set aside. Chop 1 onion, entire head of cabbage, 1 head of broccoli, 1 red pepper, 4 stalks of celery and 1 large carrot into bite-sized pieces -- stir fry for 3-5 minutes in smoking hot canola oil in wok. Add back the chicken and sauce. Serve over rice. This makes approx. 18 servings and is tasty as leftovers for up to 4 days. Keep the rice separate from the chicken & veggies in the fridge.
