Pork tenderloin or steaks (cooked leftovers), ~1 lbSweet Corn, Fresh, 1 earBlack beans, 1 canRed Ripe Tomatoes, 3 cherryGreen Chili Peppers, cannedOnions, raw, 1 smallMission Carb Balance flour tortillas, 3 Cheddar or Colby Cheese, Low Fat, 2 cup,Jalapeno, 1 pepperGreen Peppers (bell peppers)Frontera green chile enchilada sauceLime Juice
Chop/dice/process all vegetables. Chop cooked pork finely. Mix vegetables and pork. Construct casserole by layering the meat/veggie mixture, torn tortillas (1 per layer), and cheese (reserve some for topping). Pour green chile sauce over casserole. Top with remaining cheese. Bake @400 for ~45 minutes.
