Mexican Garden Stew

Ingredients
One Green Bell PepperOne Raw Onion1/2 pack of Taco SeasoningFresh or canned tomatosYellow SquashOne or Two Chicken BreastsCilantro
Directions
Cut up chicken breasts into small pieces, simmer in frying pan w/a little cooking spray until they turn white, add chopped bell pepper, chopped onion and sliced squash, stir in Taco Seasoning and Las Mas Rico (optional) and sprinkle cilantro (to taste) on top. Stir until it simmers, cover and cook on med for approx 8 minutes. Add Tomatos to the top, cover and steam for a few more minutes covered. Serve over rice or on a tortilla or eat plain.
