Roasted Tomatoes with Spinach

Ingredients
8- 1/4 in Tomato Slices2 Tbsp Balsamic Vinegar2 c Fresh Spinach2 tsp Olive Oil1/4 c Shredded Mozzarella Cheese1/4 tsp minced garlic
Directions
Marinate tomato slices in balsamic vinegar for 1 hour. Place tomato slices on sprayed baking sheet. Roast tomatoes on 375 degrees for 7 minutes. Meanwhile, saute spinach and garlic in olive oil. Once tomatoes are finished roasting, top with spinach mixture, then top with cheese. Slide back into the oven until cheese is melted and brown!
