Sunday Morning Breakfast Casserole

Ingredients
1/2 whole wheat baguette (after it's hard)3 large eggs1/3 - 1/5 cup egg whitessalt and pepper to taste1/2 cup shredded cheddar cheese3 - 4 slices deli hamenough butter to grease the baking dish
Directions
Slice the baguette into 1/2 inch thick slices and lay in a pre-greased 8X8 baking dish. Pour the beaten egg mixture over the bread slices and stick the whole pan in the fridge overnight. In the morning, add more liquid eggs (if you think the casserole needs it) and whatever toppings you like, I used cheddar and ham here. This is just as good with sausage, bacon, veggies, tofu, and on and on. Bake for about 15 minutes covered at 350 degrees, then remove cover to let the cheese on top brown, another 10 minutes or so.
