Quinoa Pilaf

Ingredients

1 cup Quinoa grains2 cups water or broth (adds more calories w/broth)1 cup chopped celery1 medium onion diced1 cups diced cabbage1 cup diced fresh red bell pepper1 cup sliced scallions (white and green parts)1 cup sliced then diced mushrooms6 cloves garlicred pepper flakes to tastesalt to taste
Cook quinoa according to package instructions, set aside.
In a medium sautee pan, set on med high heat, add 1 Tablespoon olive oil, celery, cabbage, onions and red spices. Sautee for about three minutes.
Add diced mushrooms, red pepper and garlic. Sautee another three minutes, remove from heat and stir in green onion.
In a medium glass bowl toss veggies with the cooked quinoa and remaining tablespoon of olive oil, season to taste and serve or store in the refrigerator until needed.
