Chicken Enchilladas

5 bunches of green onions2 - 4 oz cans of green chilles2 cups chicken broth1 lb colby jack cheese1/4 tsp ground cumin25 fajita size shells4 cloves of garlic or 2 TBS Garlic3 TBS butter3 TBS flour1/4 tsp saltWhole chicken 1 1/2 cup heavy cream
Chop green onions & mince garlic
melt butter and saute garlic and onions
stir in flor and gradually add chicken broth until smooth
add chilles, salt and cumin ground
simmer for 15 min
add heavy cream
boil and shred chicken
fill shells with 1/4 cup chicken, 1/8 cup cheese and sauce
place in pan and pour remaining sauce and cheese
bake at 350 for 20 min
