2 cups long grain brown rice, dry1/2 cup chopped red bell pepper1/2 cup chopped yellow onion4 medium mushrooms, fresh2 Tbsp. Extra Virgin Olive Oil4 cups low sodium chicken broth
Heat oil in a large heavy bottom sauce pan, and saute onion, peppers and mushrooms on medium-high heat until onion is translucent. Add rice and saute for another 2 minutes, stirring constantly to coat the rice in oil. Add chicken broth and bring to a boil. Turn heat down and simmer, covered, until liquid has been absorbed - about 25 minutes. Fluff rice and serve.
