Lowfat Banana Bread

3/4 C. unsweetened applesauce2 C. sugar7 overripe medium bananas3 eggs1 T. vanilla extract3 C. flour2 t. baking soda1/2 C. skim milk 1 t. lemon juice1 C. chopped walnuts
Preheat oven to 325 degrees. Grease and flour 2 loaf pans.
Beat applesauce and sugar until well-blended. Add bananas, eggs, and vanilla. Make 'buttermilk' by combining milk and lemon juice. Stir baking soda and flour together; add flour mixture and milk alternately to banana mixture until well-blended. Stir in chopped nuts.
Pour evenly into loaf pans and bake for 1 hour and 15 minutes or until a toothpick inserted comes out clean.
When my bananas get too ripe, I throw them in the freezer in the peel until I have enough to make this recipe. They should be thawed before using. I have also added 1/2 C raisins.
