Pork Fried Rice

Ingredients
1.5 lb lean pork5 scallions3 cloves garlic1 bell pepper2 cups sliced mushroom1 cup sliced carrots2 cups prepared brown rice3 tbsp low sodium soy sauce1 tbsp peanut oil2 eggs
Directions
marinate pork in your favorite asian marinade.
prepare rice
get your peanut oil hot in a wok
add onions and garlic in 1st for about 30 sec
add all veggies until just tender
add pork and sear until cooked through
add cooked rice to wok and toss
scramble raw egg than add it to the mixture
toss and serve, top with extra scallion for garnish

Serving Size: makes 5 bowls...about 2 cups ea
