Meghan's Pork Chops with Dark Cherry Sauce

*Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw, 5 chop, excluding refuse (yield from Olive Oil, 2 1tsp Pacific Natural Foods Beef Broth, 1 cup, .25 serving Cherries, sweet, canned, 2 cup, pittedCorn Starch, .20 grams Rosemary, dried, 1 tsp
Season the pork chops with salt and pepper to taste. I didn't put any on, and I was fine.
Heat the olive oil in a large non-stick skillet and brown the pork chops, about 5 minutes on each side. Add the broth (and optional 1.5 tablespoons of bourbon, if it is available is yummy to add in here), reduce heat, cover, and cook for 15-20 minutes or until pork chops are tender and broth is gone.
Open the can of cherries and dump the cornstarch in, gently swirl it around. Add the can to the pork chops, along with the rosemary, cooking until thickened.
Set skillet off of burner and let sit for a few minutes to thicken some more.
Serving Size: Makes 5 servings of one pork chop and a small pile of cherry toppings each.
