White Wine Chicken Tenderloins

-1-2 lbs of chicken tenderloins-Salt and Pepper to taste-2 tsp dried parsley-2 tablespoons of extra virgin olive oil (adjust to your preference)-1/4 cup brown rice flour (any flour will do)-1 cup low-sodium chicken broth-1/2 cup dry white wine-1 tablespoon minced garlic (adjust to your preference)
1. Rinse your chicken tenderloins; season with salt and pepper.
2. Heat 2T of EVOO in pan on medium.
3. Dredge the chicken in the brown rice flour and add to pan, searing 5 minutes on each side.
4. Add garlic, chicken broth, white wine, and parsley.
5. Let simmer on medium heat for 10-15 minutes until cooked through and liquid has thickened to a gravy-like consistency.
6. Remove from heat, allow to cool for 5 minutes. Pairs well with brown rice or couscous.
Serving Size: Makes 3 tenderloins per person
