Egg substitute, liquid (Egg Beaters), 4 cup(remove)Egg, fresh, 1 large(remove)Cheddar Cheese, .5 cup, shredded(remove)*Peppers, sweet, red, fresh, .5 cup, chopped(remove)Spinach, fresh, 4 cup(remove)Mushrooms, fresh, 2 cup, pieces or slices(remove)Onions, raw, .5 cup, chopped(remove)Olive Oil, 1 tbsp(remove)*Canola Oil, 1 tbsp(remove)Butter, unsalted, 2 pat (1" sq, 1/3" high)(remove)
use large fry pan. melt butter and olve oil.
add chopped onion, mushroom, cover and let cook on med. low. stir often. When soft add any color bell pepper. mix egg and substitute added salt and pepper to taste. Remove veggies from pan. Add canola oil to pan. Add egg to pan. add veggies and cheese to eggs.
place pan in 350 oven and bake until firm. About 20 min.
