Okra Gumbo

Ingredients
1 chopped onion3 cloves chopped garlic1 tsp olive oil1lb organic okra 2 ears fresh corn4 organic tomatoes1 small can tomato paste1 tbsp red curry paste2 cups vegetable brothpinch of rosemaryred pepper flakes to tastesalt and pepper to taste
Directions
-Sautee onions and garlic in the olive oil
-Stir in red curry and tomato paste
-Add vegetable broth
-Season with salt and pepper. Add oregano and red pepper flakes also. (You can add the salt and pepper to the onion/garlic mix if you want). Simmer for about 5 minutes.
-Add okra and tomatoes.
-Remove the corn from the cob. Add the corn last (it will cook the quickest and I like it a little crunchy).
-Simmer for another 15 minutes and serve over rice.
