1 lb. extra lean ground beef1 medium onion, chopped1 1/2 c. Minute Rice (uncooked)1 cup salsa (I used Ortega original mild)1 11 oz can of Mexicorn2 cans (14.5 oz) Hunt's petite diced tomatoes1 can peas, drained1 cup water
Brown hamburger with chopped onion. Add 1 cup water with all ingredients except peas. Bring to boil. Cook 2 mins. Add peas. Cover and cook for another 3-5 mins. Let stand 5 mins. and serve.
