Cheesy Chicken Potato Soup

2 cans chicken broth1 large can of chicken broth12 oz. can of chicken breast4 cups frozen hashed browns, southern-style1 cup Kraft Fat Free shredded cheese3 slices cooked bacon1 clove garlic1 cup chopped celery1 cup water1 cup skim milk2 tablespoons all-purpose flour1 teaspoon olive oil
Saute celery, garlic, and olive oil in bottom of 4 quart pot. Add broth, water, bacon, and potatoes. Bring to a boil, then simmer until potatoes are tender (about 15 min.). In a separate bowl, whisk together the milk and flour until blended. Add milk/flour mixture, cheese, and chicken to the soup. Simmer until cheese melts and chicken warms (about 5-8 min).
Makes about eight 1-cup servings. (1 serving = 4 Weight Watchers Points)
