Spicy Tuna Burgers

Ingredients
20 oz of Fresh Yellowfin Tuna (this makes 4 - 5oz burgers)1 packet of Chinese Hot Mustard (save these from your last chinese take out night) 2 tbsp of Go-Chu-Jang Korean Sweet and Spicy Sauce (Brand - Annie Chung)2 tbsp Soy Sauce1 tsp of Toasted Sesame Oil 1 to 3 oz of minced Ginger (depending your taste) Minced Garlic, 3 clovesFresh Chives, 2 tbsp chopped (you could also use scallions, but I didn't have any when I made this) The Soy will give you the salt for this recipe, but add in as much freshly ground pepper as you like.
Directions
Cube and grind the tuna in your food processer, you may have to do this in batches - it will depend on the size your equipment.

Add all of the seasonings to the ground tuna, and combine well.

Shape your burgers (with slightly wet hands)

I like to refrigerate these to let the flavors marry for about an hour before cooking. However if you just want to go ahead cook them- they will still taste delicious.

To Cook - in a heavy skillet or grill - heat until HOT.

Add in a little of your favorite oil - I used Olive Oil and place the burgers in your cooking vessel. You'll cook these on both sides for about 5 minutes - can be less or longer depending on how done you like your tuna.

On first flip glaze the burger the hoisin sauce. Let cook on the other side, flip and glaze the other side. Remove from the heat, cover and let sit four about 2 minutes.

Serve on your choice of roll or bunless in a great salad.

Serving Size: This take on the recipe makes about 4 burgers.
