Guilty Pleasure Nachos

Ingredients
1 ounce taco chips (I use blue corn chips which are lower in fat and carbs, but weren't on the ingredient list)3 oz. chicken cut into pieces or 3 oz. ground chicken2 tsp. Low sodium taco seasoning1 Tablespoon avocado1/2 plum tomato1 oz. low-fat, part skim mozzarella1 Tbsp. refried beans (I use fat-free refried beans, but you could substitute black beans as well.)
Directions
Cut the chicken breast into small bite size pieces, cook, and add taco seasoning. Prep your vegetables while chicken cooks. Once the chicken is done, plate the taco chips, add chicken, beans and cheese. Pop in the microwave for about 40-60 seconds on high until cheese melts. Add fresh veggies and enjoy!

    Very good. Instead of using nacho chips, i cook won tons in the microwave. they taste just like chips but no fat and alot less calories! def worth a try. microwave for a minute and a half then throw on the topping. Won tons are great for healthy snacks - 7/9/08

    This sounds AWESOME. Lots of people like sour cream on their's but even the fat free kind has lots of cals, so try using regular Greek Yougart, it tastes just like sour cream, and is totaly fat free and very low cals, & can be used in place of whipping cream when called for. - 1/7/10

    very nice I did make a couple of changes I seasoned the meat with a little chili powder and mrs. dash table blend and extra garlic. Instead of refried beans I mashed pinto beans the calories are lower and the taste is great plus I like the chunkier texture. and I used 2% milk cheddar cheese I like m - 7/10/08

    I made this with my homemade taco seasoning mix-- cheaper than the packages-2 t. instant minced onion, 2 t. chili powder, 1/2 t. dried oregano, 1/2 t crushed dried red pepper, 1/2 t. instant minced garlic, 1 t ground cumin, 1 t. cornstarch-I make several & put in baggies. Used green onions. Yummy! - 7/8/08

    I make my own chips in the oven. No extra fat season with garlic and what ever spice I am wanting. They brown quickly. Black beans if using a can I rinse them and fresh tomatoes. Yum - 4/7/10

    I love the suggestions to use blue tortilla chips. The serving size seems pretty small to me. I would also add other veggies to this, green onions, olives and maybe even a little corn. Don't know how that would effect the calories though. - 7/9/08

    @ KENZIBRROK25... Actually fat free sour cream isin't as packed with cals as you might think. It's only 20 cals for 2 tbs! I say go for the fat free sour cream!! :) - 11/4/10
