Pad Thai with Tofu

Rice noodles, 8ozBrown sugar, 1/4 cupLime juice, 1/4 cupSoy sauce, 1/3 cupPeanut oil, 1tbspScallions, 3Garlic, 1 cloveUnsalted dry-roasted peanuts, 1ozFirm tofu, 15oz [1 package]
Soak noodles according to package instructions. Drain.
In a small bowl, whisk together brown sugar, lime juice, and soy sauce.
In a large nonstick skillet, heat oil over medium-high heat.
Add scallions and garlic and cook, stirring constantly, until fragrant (about 30 seconds).
Add noodles, [already prepared] tofu, and sauce to skillet. Cook, tossing constantly, until noodles are soft (about 1 minute).
Serve noodles with lime wedges, topped with cilantro and peanuts.
