Crunchy Tuna Salad

Ingredients
2 large cucumbers, diced and seeds removed2 large tomatoes, dicedone half yellow onion, diced2 gala apples, diced2 large pouches of chunk white tuna4 tbsp Mayo (can use light mayo to lower calories and fat or use only 2 tbsp regular mayo)2 tbsp balsamic vinegar2 tbsp dried parsleysalt and pepper to taste
Directions
dice all the vegetables, mix with tuna, mayo, salt, pepper, vinegar and parsley. Mix well. Best if left to sit overnight in refrigerator. You can also add garlic powder to taste if desired. Another variation on this might include mushrooms, green onions, pear or carrot, whatever your favorite veggies are will do.
