Spiced Oat Protein Pancake w/ Flax Meal & Chia Seeds

1/2 Cup Rolled Oat Flakes6 Egg whites1 Tbsp Unsweetened Apple Sauce1 Packet Stevia {1s=.5g; 2s=1g=per packet}, 1 gram 1/4 Tsp Pumpkin Pie spice (or mix of nutmeg & cinnamon)2 Tbsp Flax Seed Meal (ground flax) 1 Tbsp Chia seed OptionalChopped applesBerries (chopped to bite sized)Other fruit
Add oats, flax seed meal, stevia and spice to blender. Blend until oats are powdered (or close to it).
Add egg whites and apple sauce. Pulse or blend to combine.
Set non stick pan to heat with spray.
Add Chia seeds, once ready to make pancakes or just sprinkle on batter in pan as chia seeds will thicken the batter.
Once pan is hot pour half of batter into pan add fruit if using making sure to press down into batter.
Once edges are cooked and bottom is lightly browned flip over and cook other side. Make sure you press the pancake down so it cooks.
Enjoy by itself or with Maple syrup.
