Vegetable Pilaf (BJM)

Indian, Aromatic Basmati Rice, 1 cup, 1 serving Olive Oil, 2 1tsp Bay Leaf, 1 leaf, whole*Hot Chili Peppers, 1 pepper, chopped*Cumin seed, 1 tbsp Ginger Root, 1 tsp, paste or gratedSalt and pepper to taste.Any fresh vegetables on hand like carrots, peppers, potato, onion, etc. All vegetables chopped.
Wash and soak rice. In a deep pan, add olive oil, bay leaf, chili peppers, cumin seed, ginger root, and any vegetable that you would like to add. Cook for a few min. Add salt and pepper to taste.
Rinse rice, add to mixture, and 2 cups of water. Bring to boil, cover and simmer for 15 min. Turn off heat and let sit for another 5 min.
Stir and serve,
Serving Size: 4 Servings or use as a side dish
