Light & Easy Chicken Jambalaya

Ingredients
Vegetable cooking sprayCanola Oil, 1 tbsp 3/4 cup coarsely chopped lean cooked Ham3/4 cup chopped Green Peppers1/2 cup chopped Onions1/2 cup chopped Celery2 cloves Garlic, minced2 cups canned low-sodium chicken broth1 (14-1/2 ounce) can no-salt-added Stewed Tomatoes, undrained and chopped 1 cup cooked Chicken Breast2/3 cup White Rice, long grain1 Bay Leaf1 tsp dried whole Basil1/2 tsp ground Thyme1/2 tsp Chili powder1/4 tsp Salt1/4 tsp black pepper1/2 tsp Hot Sauce
Directions
Coat a large skillet with cooking spray, add oil. heat over medium heat until hot. Add ham, green pepper, onion, celery and garlic; saute 5 minutes. Stir in chicken broth and remaining ingredients and simmer covered, 15 minutes. Uncover and cook additional 15 minutes until rice is tender, stirring occasionally. Remove and discard bay leaf.
