Baked Sweet Potatoe Fries with Thyme

Ingredients
3 medium sweet potatoes2 tbsp of olive oil1/2 tsp. of ground thyme
Directions
Wash and cut 3 medium sweet potatoes into strips. Rub strips of sweet potatoes with olive oil and sprinkle ground thyme on top. Mix well. Place on a baking sheet at 325 degrees for 25 minutes.

    I didn't have thyme so added different spices. I did a couple of different versions and was able to use up part of a stash of spice blend. I was happy with the taste but missed the crunch found in restaurant sweet potatoe fries. Maybe if I made them thicker and baked in a hotter oven. - 11/19/08
