Quinoa Tofu Stir Fry

1 T Olive Oil1/2 C onion, chopped2 cloves garlic, minced8 oz. tofu cut into bite size squares1 C shiitake mushrooms (I used dried, reconstituted)1 C frozen peas, cooked and cooled1 C dry quinoa (prepared per package instructions)3 T soy sauce1/4 cup slivered almonds
1. Prepare the quinoa per the package instructions.
2. Warm the olive oil in the pan and saute the onion and garlic for a few minutes.
3. Add the tofu and half the soy sauce and cook for a few minutes
4. Add the shiitake mushrooms and peas and cook
5. Add the prepared quinoa, slivered almonds, and remaining soy sauce and cook through
