Ingredients
1 or 1 small eggplantsolive oil1/4 cup tahini1 to 2 tbsp lemon juicesesame seedssaltpepper
Directions
Rub eggplant with a bit of olive oil. Pierce skin. Place in roasting pan lined with foil (for easy clean-up) and bake at 400 degrees for 45 minutes or until soft. Remove from oven and let sit until cool. When cooled, remove skin and collect cooked eggplant in dish. Add 1/4 cup tahini, 1 to 2 tbsp lemon juice, sesame seeds, salt and pepper to taste. Mix altogether and enjoy!
