Maple-mustard Pork Tenderloin with Apples

1 1/2 lb pork tenderloincooking spray3 T dijon mustard (I substituted 1 T chinese mustard)6 T maple syrup, divided1 T fresh rosemary, or 1 t dried rosemary1/2 t black pepper4 Granny Smith apples, peeled and sliced (about 2 lb)optional rosemary sprigs
1. Preheat oven to 425 degrees F.
2. Trim fat from pork. Place pork in a broiler pan coated with cooking spray. Combine mustard, 2 T syrup, rosemary and pepper in a small bowl. Brush over pork. Bake at 425 for 25 minutes.
3. Heat a skillet coated with cooking spray to medium-high heat. Add apple, saute 5 minutes. Reduce heat to medium low, add 4 T maple syrup. Simmer 12 minutes or until apple is tender.
4. Cut pork crosswise into slices. Spoon apple over pork.
