Ingredients
1 egg1 egg white1/4 c. black beans1/4 c. morningstar "Burger" crumbles1/4 c. nonfat cottage cheese2 T. salsasalt & pepper to taste
Directions
mix together add salt and pepper to taste, cook in a skillet coated with pam. Quick and easy and taste great.

    Tastes much better than it looks. I used 1/4 cup Yves veggie breakfast sausage in place of the crumbles. I also put a small amount of grated LF cheddar on top, and garnished with cilantro. Next time I think I will put the salsa on top, which will make it look more appetizing. - 3/19/08
