2lb Ground Turkey, lean2.5 cups shredded cheddar1/2 pakage cream cheese (optional)6 green bell peppers1/2 cup bread crumbs2 eggs1 packet taco seasoning1 can rotel, 16oz mild1 can 16oz enchilada sauce, mild2 teaspoon salt2 teaspoon pepper2 teaspoon cummin2 teaspoon onion powder2 tbsp olive oil
Brown ground turkey in a frying pan with olive oil, spices and taco seasoning. Stir bread crumbs and 1 1/2 cups cheddar cheese and cream cheese (optional for an extra creamy addition) in a mixing bowl. Cut bell peppers in half and stuff with turkey filling and place snugly into a 9x11 inch baking dish and pour can of rotel and enchalada sauce evenly over peppers. Sprinkle remaining cheese onto dish and cover with tin foil. Bake in the oven on 350 degrees for 50 minutes and let cool 5 minutes before serving. Enjoy!
