Chicken Tikka Saag

3 lbs. chicken pieces skinned tossed with tikka spice5 cloves garlic, minced 2 large onions, minced 2 large tomatoes, crushed 1 inch piece ginger, minced 8 tablespoon fat free plain yogurt2 lbs. frozen spinach 1/2 teaspoon crushed red pepper 1 teaspoon coriander powder 1/2 teaspoon turmeric ½ t cardamom ¼ t. ground cloves Pam 1 teaspoon garam masala 1/2 teaspoon salt Tikka spice:6 heaped teaspoons coriander6 heaped teaspoons cumin6 heaped teaspoons garlic powder6 heaped teaspoons paprika4 heaped teaspoons garam masala3 heaped teaspoons ground ginger3 heaped teaspoons dried mint2 heaped teaspoons chili powder
Cook spinach according to directions. Chop in blender with 4 T yogurt.
Cut chicken into 1-2" cubes. Toss chicken with 6 T tikka spice.
Spray frying pan with Pam. Heat. Add chicken. Spray with more Pam.
Fry the chicken lightly until lightly browned and set aside.
Heat the remaining oil and add ginger, garlic and onions until lightly
brown. Add tomatoes, salt, cayenne, coriander powder, turmeric, cloves,
and cardamom. . Cook for 10 minutes on low heat. . Simmer until the chicken is tender. Add spinach and garam masala and 4 T yogurt.. Cook until spinach starts sticking to pan.
Remove from heat. Serve on rice.

This was good, but next time I will add more yogurt and some more cayenne and crushed red pepper to increase the heat. It had good tikka flavoring but seemed a bit heavy on spinach taste. I'm basing these suggestions off a dinner I had at a restaurant in Columbus, so it's just preference. - 3/7/11
