1/4 medium onion or 1/2 small (about 50 grams) choppedHalf a medium potato (about 90-100 grams) grated1 tbsp veg. oil2 eggs.
Chop the onion finely. Grate the potato. Add to medium frying pan with 1 tbsp oil (less if you desire lower calories). Stir fry until the potatoes start to get crispy (do not stir constantly).
Beat the eggs and add. Simmer on low-medium heat until the eggs are cooked on the bottom and still shiny on top. Remove from heat & serve.
