Ground turkey, 20 oz1 cup each chopped onion and mini tri color chilis1/4 cup chopped garlicChicken broth, 2 oz4 peppers, any colorSeason with your favorite seasonings4 wedges low fat Laughing Cow cheese1/2 cup shredded cheddar or your choice of cheese
Cook turkey, onion, peppers garlic and spices in chicken broth, until done and most of the broth has cooked off, then stir in laughing cow cheese. Arrange peppers in microwave dish or crockpot, stuff with the turkey mixture and cook covered in the microwave or slow cook until done. Sprinkle with cheddar cheese before serving.
