Crunchy Tuna Patties

Ingredients
1 (3 oz.) can of tuna in water1 egg white4 Wheat Thins crackers, crushed1 Tbs. grated carrot1-2 Tbs. chopped water chestnuts1 tsp. minced onion, if toleratedSalt and pepper to taste
Directions
Mix all ingredients together and form into two patties.

Spray medium skillet with nonstick cooking spray. Cook patties until golden brown.
