Spinach and Egg Breakfast Saute

0.5 tsp olive oil3 large Mushrooms, sliced thin1/2 cup chunky salsa, drained of most liquid2 cups baby spinach1 extra large eggsalt and pepper to taste
Makes one serving. Heat olive oil over medium heat in a non-stick pan ( a flat bottom wok works very well) Saute mushrooms for 2-3 minutes until soft. Add spinach and salsa and saute until spinach is wilted, about 2 min. Push veggie mixture to side of pan, spray bottom with cooking spray. Crack one egg in pan and cook about 1 min, turn over easy to cook for 1 more min. Remove veggie mix to serving dish and top with egg. Salt and pepper to taste. For added protein or a heartier meal, sautee 1 diced vegetarian sausage patty with the mushrooms.
