Fish Sarciado

Ingredients
400 g Fish3 medium whole (2-3/5" dia) Red Ripe Tomatoes, chopped and diced1 cup, chopped Onions5 cloves Garlic3 large Eggs, beaten2 tbsp Extra Virgin Olive Oil
Directions
1. Fry fish until golden brown. Set aside.
2. Saute garlic and onion in olive oil.
3. Add the tomatoes. Simmer until the tomatoes become mashable.
4. Add eggs and stir. Simmer for around 2 minutes.
5. Add fried fish and simmer for another 5 minutes.
6. Serve with hot rice and enjoy!
