Vegetarian Chili

Ingredients
1 tablespoon olive oil1 bag of Boca crumbles1/2 onion, chopped2 cloves garlic, minced1 can (28 ounces) crushed tomatoes, undrained1 can (16 ounces) kidney beans, drained1/2 teaspoon chili powderPinch of cayenne pepper1 teaspoon sugar free maple syrup1 teaspoon wine vinegar1/2 teaspoon ground coriander1/2 teaspoon turmeric
Directions
Heat oil in a large saucepan. Add boca, onion and garlic; cook 5 minutes, stirring frequently. Add remaining ingredients; simmer uncovered 25 minutes.
