1c whole wheat flour1c warm tap water (85 degrees)1t honey
combine all ingredients in a glass or plastic container and cover loosely with a cloth. allow to ferment 4-5 days, stirring and "refreshing" daily with 1/4c whole wheat flour and 1/4c water.
starter is ready when it is bubbling and tan in color and has a pleasant sour smell.
WARNING: Discard batch immediately and start over if there is any discoloration, a foul odor or growing fuzzy things in the mixture.
WARNING2: Do Not use and metal utensils or put into metal containers. If contact with metal occurs, discard batch immediately and start over.
Serving Size: makes 1.5C starter for use in baking
