Slow Cooker Bean Chalupa

Ingredients
1 lb pinto beans4 lb pork roast6 cups water1/2 cupchopped onion2 minced garlic cloves1 Tbsp salt1 Tbsp cumin2 Tbsp chili powder1 Tbsp oregano1-4 oz. can green chiles1-2 oz jar pimentosOptional toppings: Corn chips, cheddar cheese, green onion, diced tomatoes, hot sauce, salsa, sour cream
Directions
Rinse beans and place in slow cooker. Add other ingredients. Cook on low for 8 hours. Remove roast and shred with fork. Return to slow cooker. Serve with toppings if desired.

    I find it better to soak the pinto beans overnight. I also like mine w/ a little more kick, so I use 4 oz of chipotle in adobo sauce (canned). One of my favorites. Great as a leftover too. - 1/6/13
