Fat Free Leek and Potato Soup

Ingredients
2 leeks6 potatoes, chopped (peeled or not)some onion if you liketwo veggie stock cubes3 pints of water (or 6 cups) or more, as you likesalt and pepper
Directions
Chop leeks and potatoes and onion, add to large cooking pot. Add water and two stock cubes. Cook and let simmer for about 30 minutes. Add salt and pepper to taste.

Serving Size: Makes 5 or 6 bowls of soup. Add more water for a thinner soup.
