170 grams Cooked Shrimp170 grams scallops1 lb chicken breast5 links of Maple & Honey Sausage (or, whatever sausage you prefer)1 can Yellow Sweet Corn1.5 cups Diced Tomatoes1 cup diced Green Pepper3 cloves Garlic - chopped1 clove Shallot - chopped1 Tbsp Vegetable Oil1 Tbsp Chili powder1 Tbsp Pepper1 Tbsp Cayenne Pepper1 Tbsp Dried Cilantro (use fresh if you prefer)1 Tbsp All Spice1 Tsp Saffron3 cups water2 cups uncooked Jasmine rice
*Brown Garlic & Shallot in Vegetable Oil
*Cook sausages & chicken half way
*Throw in the prawns & scallops - stir all together
*Add rest of the ingredients (including rice & water)and stir together
*Bring to a boil and then simmer
*Let simmer for 25 minutes
*Serve!
*Makes 6 servings
